2 tablespoons sherry vinegar
1 clove garlic, chopped
1/3 cup olive oil
1 (6 ounce) bag spring greens mix
2 cups baby arugula
1 (7.4 ounce) jar hearts of palm, drained and sliced (heart of a palm tree)
1/2 cup sliced strawberries
2 tablespoons pumpkin seeds
In bowl, whisk together vinegar and garlic. Whisk in oil.
In bowl, combine greens, arugula, hearts of palm and strawberries. Drizzle over
salad. Toss gently. Arrange salad on a platter. Sprinkle with pumpkin seeds.
Makes 6 servings.
