Avocado Salad Dressing recipe

2 tablespoons oil
1 large ripe avocado
3 tablespoons lemon juice
1/2 teaspoon salt
Dash of freshly ground pepper
1 to 2 minced garlic cloves

Mash avocado with fork. Shake all ingredients together in a jar.
