Egg Substitute recipe

3 egg whites
2 tablespoons instant nonfat dry milk powder
1 teaspoon water
2 to 3 drops yellow food coloring, optional

In a small bowl, combine all ingredients; mix well. Makes 1 serving (equivalent to 2 eggs).

Nutrition facts per serving: 64 calories, 156 mg sodium, 2 mg cholesterol, 5 g carbohydrate, 10 g protein, trace fat, 0 fiber. Diabetic exchanges: 1 very lean meat, 1/2 skim milk
