Cheese Scalloped Potatoes and Carrots
Ingredients
Potatoes and Carrots
- 2 cups boiling water
- 2 teaspoons salt
- 5 cups potatoes, sliced
- 1 1/2 cups chopped onion
- 2 cups carrots, sliced
Cheese Sauce
- 3 tablespoons butter, melted
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- Pepper, to taste
- 1 1/2 cups milk
- 1 cup grated Cheddar cheese
Instructions
- Heat oven to 375 degrees F.
Potatoes and Carrots
- Cook for 5 minutes and drain.
Cheese Sauce
- Add flour and salt to margarine. Add pepper, milk and cheese. Alternate layers of vegetables and cheese sauce. Cover with 1/2 cup grated Cheddar cheese.
- Bake for 1 hour.
