Cheesy Bacon Ranch Potatoes
Ingredients
- 7 medium potatoes, cut into 1/2 inch cubes
- 1/4 cup butter, cubed
- 1/2 to 1 pound bacon, each strip cut into 2 inch pieces and cooked
- 1 cup sour cream or plain Greek yogurt
- 1 envelope Ranch salad dressing mix
- 1 cup (or more) shredded Cheddar cheese or a combination of cheeses
Instructions
- Heat oven to 325 degrees F. Grease an 11 x 7 inch baking dish.
- Place potatoes in prepared baking dish; dot with butter. Cover and bake until tender, 60 to 65 minutes.
- Combine bacon (reserving some for sprinkling on the top), sour cream or yogurt and salad dressing mix; pour over potatoes and toss lightly. Sprinkle with cheese. Bake, uncovered, until cheese is melted, 5 to 10 minutes.
- Sprinkle with bacon and serve.
