Corn Fritter Cakes
Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 2 eggs
- 1 cup cream-style corn
- 1 tablespoon melted shortening
Instructions
- Sift flour; measure; sift again with baking powder, salt and pepper.
- Beat eggs well; add corn; mix; stir in flour and shortening.
- Drop by tablespoonsful into hot shortening 1/4 inch deep in frying pan.
