Oven Roasted Sweet Potato Cubes

Oven Roasted Sweet Potato Cubes recipe

Yield: 4 to 6 servings

Ingredients

  • 1 large sweet potato or two medium sweet potatoes
  • 1 tablespoons melted butter, coconut oil or olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Heat oven to 425 degrees F.
  2. Wash and peel sweet potatoes. Cut into bite size cubes, about 1/2 inch.
  3. In a large mixing bowl, toss the sweet potato cubes with butter, salt, pepper, cinnamon (if using) and nutmeg (if using). Mix well to coat the cubes evenly with seasoning.
  4. Transfer the cubed sweet potatoes to a baking sheet lined with parchment paper or aluminum foil. Spread the cubes out in a single layer, not touching each other. Do not overcrowd the baking sheet.
  5. Bake for 25 to 30 minutes, stirring and flipping every 10 minutes. Roast until the sweet potato cubes are golden brown and crispy on the outside and tender on the inside.
  6. Remove from the oven and let them cool for a few minutes. Serve them hot as a side dish or snack.

Notes

Cut sweet potatoes into bite-size pieces to help them cook quickly and evenly. The skins may be left on, if desired.
