Sweet Potato Bake

What’s fall without a sweet potato or two? The sweet potato bake is a delicious contribution to your Thanksgiving dinner. The secret is in the combination of flavors from the sweet potatoes and caramel apple dipping sauce to the pecans roasted on top to give the dish a smooth finish. It’s so good you won’t know if you’re eating a side dish or dessert!

Sweet Potato Bake recipe

Yield: 8 servings

Ingredients

  • 4 large sweet potatoes
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • Juice of 1 large lime
  • 1 cup caramel apple dip
  • Pecans (optional)

Instructions

  1. Heat oven to 350 degrees F.
  2. Butter a 1 to 1 1/2 quart baking dish and set aside.
  3. Pierce each potato with a fork several times.
  4. Place potatoes on a baking sheet and bake for 45 to 60 minutes, or until potatoes are very tender. Allow potatoes to cool slightly and peel.
  5. Combine the warm potatoes, butter, salt, lime juice and caramel apple dip in a large bowl and mash by hand with a potato masher or pureé with an electric hand-held mixer.
  6. Spoon mixture into the prepared baking dish and bake for 15 minutes. (For quick reheat, microwave in microwave safe container for 5 minutes.)
