These are great little snacks to have around the house for when you have
an urge for something but don't know what.
1 (18 ounce) jar peanut butter, creamy or chunky
(I sometimes use chunky for the extra crunch)
2 cups Rice Krispies
1 1/2 cups confectioners sugar
1 cup melted semisweet chocolate
Melt chocolate in a double boiler until smooth. Set aside.
In a medium bowl, combine peanut butter, Rice Krispies and confectioners
sugar, mixing until all ingredients are incorporated and forms a dough.
Pinch off 1-inch pieces and roll into a ball (I have a digital scale and
weigh out pieces of dough for uniform balls). With a toothpick or fork, dip
the balls into chocolate until totally coated (I sometimes roll them in finely
chopped peanuts if I am using creamy peanut butter). Place on a cookie sheet
lined with parchment or wax paper. Chill 30 minutes and enjoy.
I sometimes add finely chopped dates or raisins.
