Apricot Puree

This pur�e is delicious when served with hot biscuits, scones, pancakes, waffles or French toast.

1 1/4 cups apricot nectar
1 (6 ounce) package dried apricots
6 tablespoons granulated sugar

Stir all ingredients in a heavy medium size saucepan over medium heat until sugar dissolves and mixture simmers. Cover and cook until apricots soften, 6 minutes. Remove from heat and cool slightly.

Transfer mixture to a food processor or blender and pur�e until almost smooth (there will be small bits of apricot remaining). Remove and refrigerate. Holds 1 week in refrigerator.

Makes 1 1/2 cups.
