My sister makes these in advance she wraps them up and freezes them and uses
them as needed. These are great and her son loves them.
1 pound bulk sausage
1 can Ro-Tel tomatoes
4 eggs, beaten
8 ounces Cheddar cheese, shredded
10 flour tortillas
Brown sausage until done, drain excess grease. Add the eggs and cook until
done. Add tomatoes and cook until heated through.
Heat tortillas in microwave until heated through or in oven.
Fill tortillas with a couple of spoonfuls of meat mixture, sprinkle with
cheese, fold or roll. Then wrap in plastic wrap and freeze.
When ready to serve, remove from freezer and microwave for 2 minutes or till
heated through.
