Chimichanga Recipes

Oven-Fried Chicken Chimichangas

2/3 cup picante sauce
1 teaspoon ground cumin
1 1/2 cups chopped or shredded cooked chicken
1 cup shredded mild cheddar cheese
6 (8-inch) flour tortillas
Butter flavor nonstick cooking spray
Grated cheese (garnish)
Diced green onion (garnish)
Sour cream (garnish)

Mix picante sauce, cumin, chicken and cheese. Place about 1/2 cup chicken mixture in center of each tortilla. Fold opposite sides over filling. Roll up from bottom and place seam-side down on baking sheet that has been sprayed with nonstick cooking spray. Spray the chimichangas with butter flavored cooking spray Bake at 400 degrees F for 25 minutes or until golden.

Garnish with cheese, green onion and sour cream. if desired.

Serve with additional picante sauce.
