Black Bean and Corn Quesadilla
Ingredients
- 1 (7-inch) flour tortilla
- 1 tablespoon cooked or canned black beans, drained
- 1 tablespoon whole kernel corn
- 1 tablespoon mild salsa
- 2 tablespoons light shredded 4-cheese Mexican blend
Instructions
- Place flour tortilla on micro-safe plate. On one half of tortilla, spoon beans, corn, salsa and cheese. Fold other tortilla half over filling.
- Microwave on HIGH (100%) for 1 to 1 1/2 minutes or until cheese melts.
- Let quesadilla sit in microwave 1 minute longer.
- Serve immediately.
