Quesadilla, Tostada and Chalupa Recipes

Quesadilla con Guacamole

1 cup grated Monterey jack cheese
2 (6-inch) flour tortillas
Guacamole
Sour cream
Green onions, finely chopped
Olives, sliced

Place 1/2 cup of cheese on each tortilla. Fold over like a turnover, pressing edges together. Place tortillas, folded sides together, on a plate; microwave 2 minutes or just until cheese has melted. Garnish with guacamole, sour cream, chopped onions and olive slices.

Serves 2.

Guacamole:
2 medium avocados
1/2 cup mild or hot green chile salsa
1/2 cup sour cream
