Honey-Butter Mexican Shrimp Tacos
1 pound large shrimp in shell
1/3 cup butter
1/3 cup honey
1 tablespoon cumin
1 teaspoon chipotle powder (to taste) or Mexican seasoning
1 teaspoon salt
Freshly ground pepper
Clean and de-vein shrimp and cut into 3 pieces each (depending on how large they
are). Sauté in hot butter until cooked through (just a few minutes). Add
remaining ingredients.
Cook just before serving. Have fresh tortillas and a platter of condiments
ready.
Suggested condiments:
Lime Crema
Creamy Tomatillo Dressing
Sour Cream
Sliced Lime wedges
Shredded lettuce or cabbage
Guacamole
Lime Crema:
1 cup sour cream
Juice from 1 lime
Lime zest from 1 lime
1 tablespoon chopped cilantro
Mix ingredients and serve.
Creamy Tomatillo Dressing:
1 cup buttermilk
1 cup mayonnaise
1 envelope dry ranch buttermilk dressing
2 jalapenos (to taste)
2 tomatillos
1/2 bunch fresh cilantro
2 cloves garlic
Lime juice from fresh lime
Add all ingredients to the blender and blend until smooth.
