4 tablespoons butter
3 eggs, beaten
1 cup mild grated Cheddar cheese
Heat oven to 350 degrees F.
Peel platanos and cut into small pieces. Melt butter in a heavy skillet and brown platanos. Transfer to a buttered baking dish. Pour over beaten eggs, then cover with grated cheese. Bake for 30 minutes.
