Raspberry Tofu Cheesecake
Ingredients
- 1 cup crushed Graham crackers
- 1/2 cup honey
- 1/2 cup granulated sugar
- 1 cup red raspberries
- 1/4 cup brown sugar
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 1/3 pounds tofu
Instructions
- Grease a pie plate and press the Graham cracker crumbs to the bottom of it to form a base.
- Run the remaining ingredients through a blender and pour them into the pie shell.
- Bake the pie at 350 degrees F for 55 minutes.
- Allow to chill for 2 hours before serving.
