Serves: 4
This is another great recipe to have on hand during the summer. The basting ingredients give the vegetables a great taste.
2 medium ears fresh corn, cut into 2-inch pieces
2 medium zucchini, cut into 1-inch pieces
8 pearl onions, cooked
1/2 cup butter, melted
2 tablespoons minced fresh chives
2 tablespoons minced fresh parsley
1/2 teaspoon garlic salt
Salt and pepper to taste
Thread the corn*, zucchini, and onions alternately on four large skewers.
Combine butter, chives, parsley, and garlic salt; mix well.
Place skewers on broiler pan; broil for about 8-10 minutes, turning and brushing with butter mixture every 2 minutes.
* I have long stainless steel skewers from my barbecue grill, and I use them for the kabobs (it makes piercing the corn easy).
