2 pounds ground beef
1/4 cup finely chopped onion
1/2 cup bread crumbs
Fresh crushed black pepper to taste
4 medium green bell peppers
1 cup cooked white rice
12 ounces Sweet Baby Ray's BBQ Sauce
1 teaspoon fresh minced garlic
Cut green peppers in half lengthwise. Remove seeds and boil for 10 minutes. Remove and cool.
In large bowl mix remaining ingredients except 6 ounce of Sweet Baby Ray's BBQ sauce. Divide hamburger mix into 8 equal portions and stuff green peppers.
Place peppers on a baking sheet in conventional oven set at 350 degrees F for 35 minutes. After 35 minutes, remove excess grease from each pepper. Top with 1 ounce of Sweet Baby Ray's BBQ Sauce; continue baking 10 more minutes.
Serves 6.
