Karithopita (Greek Honey Walnut Cake)
1 1/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon salt
3/4 cup milk
1/3 cup butter, softened
1 egg
1 cups chopped walnuts
Honey Syrup:
1 cup sugar
1 cup water
1/4 cup honey
1 teaspoon lemon juice or extract
Heat oven to 350 degrees F. Grease and lightly flour a 9-inch square baking
pan.
Beat all ingredients, except walnuts and honey syrup, in mixing bowl on low
speed of electric mixer (scraping bowl occasionally) for 1 minute. Stir in walnuts.
Pour into prepared pan for 30 to 35 minutes or until wooden pick inserted in
center comes out clean. Prepare honey syrup by heating sugar and water to boiling,
then reducing heat and simmering uncovered for 5 minutes. Stir in honey and
lemon juice; pour over warm baked cake. Cut in triangles and serve.
