Irish Potato Cake with Caramel Frosting
Ingredients
Cake
- 1 cup raisins
- 1 cup chopped nuts
- 2 cups all-purpose flour, divided
- 1 cup butter
- 2 cups granulated sugar
- 2 cups mashed potatoes
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1 teaspoon ground cloves
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 cup milk
- 2 teaspoons baking soda
- 1/2 cup cocoa
- 4 eggs, well beaten
Caramel Frosting
- 2 cups brown sugar
- 1/2 cup cream
- 1/2 cup butter (1 stick)
- 1/2 teaspoon vanilla extract
- Confectioners' sugar
Instructions
Cake
- Toss nuts and raisins with 1/2 cup of the flour.
- Cream butter and sugar.
- Add potatoes, extracts and spices and mix well. Add milk.
- Combine remaining flour, baking soda and cocoa; add to creamed mixture and add eggs.
- Add prepared nuts and raisins. Mix well.
- Bake at 350 degrees F for 1 hour 30 minutes until done.
Caramel Frosting
- Combine first 4 ingredients and boil for 3 to 5 minutes.
- Add confectioners' sugar slowly, beating until thick.
