Irish Potato Pudding
6 to 8 potatoes
1 teaspoon vanilla extract
3/4 cup sugar
1 pound butter
Boil potatoes until tender. Drain. Mash potatoes. Mix in vanilla extract,
sugar and butter. Place in a baking dish. Bake at 350 degrees F until dried
out.
