Spicy Beef Pitas
Yield: 8 servings
Ingredients
- 1 pound thinly sliced cooked beef
- 1/2 cup picante sauce
- 1/3 cup red wine vinegar
- 1/4 cup olive oil or cooking oil
- 1 tablespoon snipped fresh cilantro or parsley
- 1/8 teaspoon garlic powder
- 1/8 teaspoon cracked black pepper
- 4 large pita bread rounds, halved
- 1 medium tomato, chopped
- 1 medium avocado, sliced
- 1/4 cup crumbled feta cheese
Instructions
- Place sliced beef in a plastic bag set inside a bowl.
- For marinade, in a medium bowl combine the picante sauce, vinegar, oil, cilantro, garlic powder, and pepper.
- Pour marinade over beef. Seal bag; marinate in the refrigerator for 4 to 24 hours, turning bag occasionally.
- When ready to serve, drain and discard marinade.
- Divide beef among pita bread halves.
- Add tomato, avocado, and feta cheese.
