Beef Casserole Supreme

1 pound 93% lean ground beef
1 clove garlic, minced
1/2 pound fresh mushrooms, sliced
1/2 teaspoon pepper
1 can low-fat cream of celery soup
1/2 cup uncooked Minute Rice
1 tablespoon dried minced onion
1 teaspoon oregano
1 teaspoon salt
1 (10 ounce) package broccoli
1 (10 ounce) package spinach
1 cup fat-free sour cream
4 ounces non-fat mozzarella cheese, thin sliced or grated

Cook and drain broccoli and spinach. In large skillet, brown beef; drain. Add onion, garlic, oregano, salt, pepper and mushrooms. Cook 3 minutes, stirring often. Stir in vegetables, soup, sour cream and rice. Spoon into casserole dish.

Top with cheese (sliced or grated). Bake at 350 degrees F for 15-20 minutes.
