Breakfast Bruschetta

6 servings - 2 points

6 large egg whites
3 large eggs
1 medium onion, chopped
1 large Beefsteak tomatoes, seeded and chopped
1/4 cup fresh basil, chopped
1/8 teaspoon table salt, or to taste
1/8 teaspoon black pepper, or to taste
6 slices high-fiber bread, toasted and cut diagonally into 4 pieces each

With a fork, lightly beat egg whites and eggs.

In a large skillet coated with cooking spray, saute onion over medium heat, stirring frequently, until it starts to turn golden, about 5 minutes. Add tomatoes and cook 1 minute more.

Add eggs and scramble until cooked, about 2 minutes. Add half the basil and season with salt and pepper.

Top toast with egg mixture and sprinkle each with remaining basil. Serve immediately.
