Cinnamon Bran Pancakes

3/4 cup oat bran
3/4 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/8 teaspoon salt
2 slightly beaten egg whites
1 1/4 cups buttermilk
1 tablespoon vegetable oil

In a medium mixing bowl combine oat bran, flour, sugar, baking powder, cinnamon, baking soda and salt.

In a small mixing bowl combine the egg whites, buttermilk and oil; beat with fork just until combined. Add to dry ingredients, stirring just until combined.

Spray a cold griddle or pan with nonstick spray coating; heat. Use 1/4 cup per pancake. Cook on medium heat until golden brown, turning once.

Makes 8 to 10 pancakes.
