Chicken and Turkey Recipes
Cajun Burgers:
1 pound extra lean ground turkey
1 red bell pepper, chopped
1/2 cup frozen corn, defrosted
1/4 teaspoon cayenne pepper
1 teaspoon minced bottled garlic
4 thin slices light cheddar cheese
4 whole grain hamburger buns, whole grain pita bread or whole grain English
muffins
Spinach or lettuce leaves and tomatoes for topping
Chipotle Sauce:
2 tablespoons catsup
1 tablespoon non-fat sour cream
Tabasco or chipotle sauce to taste
Preheat grill (indoor or outdoor grill or frying pan) to medium high.
Combine hamburger with red peppers, corn, cayenne and garlic in a medium
sized bowl. Form into 4 patties.
Combine chipotle sauce ingredients in a small bowl and set aside.
Grill patties 4 minutes on each side or until juices run clear. Remove from
heat and top each burger with a thin slice of cheese. Spread hamburger buns
with chipotle sauce, top with burger, spinach or lettuce and tomatoes.
