Chicken and Turkey Recipes
Chicken Marengo
2 pounds boneless chicken
4 ounces sliced onion
2 cups chicken bouillon
Salt and pepper
1 cup sliced mushrooms
2 ripe tomatoes, sliced
1/2 cup wine or 1/2 teaspoon sherry extract
In a nonstick skillet, sear chicken on all sides. Add onion; brown. Pour
bouillon onto mixture. Add salt, pepper, mushrooms and tomatoes. Cover pan
tightly. Simmer gently 1 hour.
Stir in wine or extract.
Makes 4 dinner servings.
