Crock Pot Indian Chicken recipe

2 cups shitake mushrooms, sliced
1 cup onions, chopped
1/2 cup celery, chopped
1 medium garlic clove, minced
1 pound boneless, skinless chicken thighs,
    cut into bite-size pieces
1 tablespoon all-purpose flour
1/4 cup fat-free chicken broth
1 1/2 teaspoons curry powder
1 teaspoon table salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
3 cups canned crushed tomatoes
1/4 cup golden seedless raisins
Rice

Sauté mushrooms, onions, celery and garlic for 5 minutes; put in crock pot with chicken.

Stir together flour and chicken broth until smooth; add to crock pot. Add curry powder, salt, pepper, paprika, tomatoes and raisins. Cook on LOW for 5 hours.

Serve over rice.
