Chocolate Zucchini Brownies

1.5 Points Per Serving *

Mix in large bowl:

2 - 2 1/2 cups grated zucchini
1/2 cup ripe mashed banana (about 1 medium)
1 tablespoon water
2 teaspoons vanilla extract
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup cocoa powder
2/3 cup sugar (more if you like it sweeter)

Mix zucchini, banana, water and vanilla extract in a large bowl.

In another bowl, mix together remaining ingredients.

Fold dry ingredients into wet; batter will be stiff. Bake in nonstick 9 x 13-inch baking pan at 350 degrees F for 25-35 minutes until a wooden pick comes out clean.

Makes 18.
