Orange-Spice Oatmeal Cookies

4 1/2 ounces rolled oats
1/2 cup plus 1 tablespoon whole wheat flour
1 teaspoon baking powder
1 teaspoon apple spice
Artificial sweetener equivalent to 3 tablespoons
    firmly packed brown sugar
1/4 cup plus 1 tablespoon raisins
1 cup orange juice
1 tablespoon plus 1 1/2 teaspoons vegetable oil
1 teaspoon vanilla extract

Combine all dry ingredients in a medium bowl, mixing well. Add raisins.

In a small bowl, combine remaining ingredients. Add to dry mixture, stirring until all ingredients are moistened. Let stand for 15 minutes. Heat oven to 375 degrees F.

Stir mixture once, then drop by tablespoons onto a baking sheet that has been sprayed with a nonstick cooking spray.

Bake 15 minutes, until bottoms of cookies are lightly browned. Remove to a rack to cool.

Makes 9 servings, 3 cookies each.
