Ice Cream Sandwich

1/2 cup fat-free vanilla ice cream
2 2/3 ounces small chocolate chip cookies (8 small cookies)
2 tablespoons rainbow sprinkles

Allow ice cream to soften for 2 minutes at room temperature. Spread 2 tablespoons of ice cream onto a cookie and top with another cookie to make a sandwich.

Roll edges of cookie sandwich in sprinkles to coat. You should use about 1/2 tablespoon of sprinkles per sandwich.

Repeat with remaining ingredients. Wrap each sandwich in plastic wrap and freeze for several hours before eating.

Yields 1 ice cream sandwich per serving.
