Orange-Glazed Roasted Shrimp

1 pound shrimp, large, peeled and deveined
3 medium shallots, coarsely chopped
1 medium orange or yellow bell pepper, coarsely chopped
1/2 cups orange juice
2 tablespoons fresh lemon juice
2 tablespoons honey
1 tablespoon fresh thyme, chopped
1 teaspoon fennel seed
1/8 teaspoon salt, or to taste
1/8 teaspoon black pepper, or to taste

Heat oven to 450 degrees F.

Scatter shrimp, shallots and bell pepper over bottom of a 9 x 13-inch glass baking dish.

In a small saucepan, stir together orange juice, lemon juice, honey, thyme and fennel seeds; bring to a simmer and cook for 2 minutes.

Pour orange glaze over shrimp mixture; toss to coat and spread into a single layer and season to taste. Roast for 8 minutes.

Serve hot.

Yields about 3/4 cup per serving.
