1/4 cup diced green bell pepper
8 ounces chopped cooked beef
8 ounces cooked pared potatoes, diced
1 cup chopped tomatoes
1/4 teaspoon thyme leaves
Dash pepper
2 teaspoons chopped fresh parsley
Heat oven 350 degrees F.
Heat oil in 9-inch nonstick skillet that has a flameproof or removable handle. Add onion and green pepper and sauté until softened. Add beef and potatoes; sauté until potatoes are lightly browned. Add tomatoes, salt, thyme, and pepper. Cook over low heat for 3 minutes, stirring frequently. Press mixture together with back of spoon. Transfer skillet to oven and bake 6 to 8 minutes or until underside is browned. Sprinkle with parsley.
