10 (6-inch) fat free flour tortillas, halved
3 cups cooked cubed chicken
1 cup frozen corn
1 onion, chopped
1/2 green bell pepper, chopped
1 (14 1/2 ounce) can stewed tomatoes
1 (10 ounce) can diced tomatoes and green chiles
1 cup shredded reduced fat cheese
Heat oven to 350 degrees F. Spray a 9 x 13-inch pan.
Line pan with half the tortillas. Layer chicken, corn, onion, pepper and stewed tomatoes. Cover with remaining tortillas. Pour tomatoes and green chiles over top. cover with foil and bake until heated through - 30 minutes.
Uncover and sprinkle with cheese. Bake uncovered until cheese is melted, about 10 minutes longer.
Can serve with fat free sour cream and salsa.
