Weight Watchers Stuffed Pepper
1 large green pepper
1 slice bread, cubed
2 ounces cheddar cheese, cubed
1 teaspoon onion flakes
1/4 teaspoon oregano
1/8 teaspoon garlic powder (optional)
Salt and pepper to taste
3/4 cup tomato juice or V-8 juice, divided
1/2 cup mushrooms (optional)
Cut pepper in half lengthwise and parboil or microwave until soft. Drain.
Combine ingredients listed, using only 3 tablespoons of tomato juice; mix
until moist. Stuff mixture into pepper halves and place in small baking
dish; cover with remaining tomato juice. Bake at 350 degrees F for 20 to 30
minutes.
Yields 1 serving.
