Caramel Apple Salad
3 cups diced apples
Lemon juice
1 cup dry roasted peanuts
1 cup miniature marshmallows
1 small box sugar-free butterscotch instant pudding
1 (8 ounce) can crushed pineapple
1 (8 ounce) container fat free Cool Whip
Toss diced apples with lemon juice (just enough so the apples don't turn
brown). Add peanuts and marshmallows.
In separate bowl, mix together butterscotch, pineapple and Cool Whip. Add
to apple mixture. Keep refrigerated until ready to use.
You can use peeled apples or unpeeled.
Serving size: 1 cup
4 WW points per serving.
