Sauerkraut Salad
2 (No. 303) cans sauerkraut, drained
1 cup diced celery
1 cup diced green bell pepper
1 cup chopped onion
1 small jar pimento, chopped
1/3 cup water
2/3 cup vinegar
3 tablespoons vegetable oil
Sweetener to equal 1 1/4 cups sugar
Mix sauerkraut, celery, green pepper, onion and pimento in large bowl.
Heat water, vinegar and oil. Dissolve sweetener in hot liquid. Pour over
vegetables. Mix well. Chill overnight and serve.
Yield: 12 to 14 servings.
NOTE: If you are on Weight Watchers you can eat all you want.
