2 eggs
2/3 cup cottage cheese
1 tablespoon onion flakes
Salt and pepper to taste
Cook cauliflower according to package directions; drain. Place in 1-quart baking dish that has been sprayed with Pam.
Heat oven to 350 degrees F.
Place eggs, cottage cheese, onion flakes, salt and pepper in blender container. Blend until smooth. Pour evenly over cauliflower. Bake, uncovered 30 minutes until set and lightly browned.
Each serving provides: 2 protein exchanges, 2 vegetable exchanges

1 (10 ounce) package frozen cauliflower2 eggs
