Angels on Horseback

Always serve Angels on Horseback warm from the oven. They are not as good if they are cold. These can also be made on the grill. I have made them over a mesquite fire, and they're absolutely delicious.

Angels on Horseback recipe

Ingredients

  • 12 shucked oysters
  • 12 thin slices bacon or prosciutto
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon smoked paprika
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat oven to 450 degrees F. Set a wire rack into a small baking dish.
  2. Mix salt, pepper, paprika and parsley. Sprinkle over each oyster. Wrap each oyster with a slice of bacon or prosciutto, and secure with a wooden pick. Set on the wire rack.
  3. Bake until the bacon is crispy, 10 to 12 minutes, turning once.
  4. Serve immediately.
