Frozen Peach Daiquiris
Yield: three 6-ounce drinks; 18 peach cubes
Ingredients
Daiquiris
- 2 1/2 ounces dark rum*
- 1/4 cup freshly squeezed or bottled lime juice
- 1/4 cup granulated sugar*
- 9 Peach Cubes
- 3/4 cup crushed ice
Peach Cubes
- 4 fresh peaches**, sliced
- 1 tablespoon lemon juice
Instructions
- Daiquiris: Combine all ingredients in blender; blend until smooth. Pour into stemmed glasses. Garnish with peach and lime slices.
- Peach Cubes: Combine peaches and lemon juice in blender; puree. Pour into ice cube trays; freeze.
Notes
* For a non-alcoholic version, substitute pineapple juice for rum and decrease sugar to 2 tablespoons.
** If using very small peaches, use 8 to produce the correct amount of puree.
