Hot Water Cornbread
Ingredients
- 1 cup cornmeal
- 1 tablespoon granulated sugar
- 1 cup boiling water
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon oil
- 1 tablespoon all-purpose flour
- 1 egg, separated and beaten
Instructions
- Pour water over cornmeal, salt, sugar and oil. Let stand 30 minutes.
- Blend in flour, baking powder and beaten egg yolk. Fold in beaten egg whites. Pour into a greased cast iron skillet or 9-inch square baking pan.
- Bake at 400 degrees F.
