Kiwi Fruit Pancakes
Ingredients
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1 egg, beaten
- 2/3 cup finely chopped kiwi fruit
- 1 1/2 tablespoons butter, melted
- 2 tablespoons light brown sugar
- 2/3 cup milk
- 2 tablespoons grated orange peel
Instructions
- Combine flour, brown sugar, baking powder and salt in large bowl.
- Combine egg, milk, kiwi fruit, orange peel and butter in medium bowl; stir into flour mixture until blended.
- Drop large spoonsful onto a lightly greased hot nonstick griddle and cook until bubbles on the top surface start to pop, then flip over and cook until golden.
- Serve hot with golden syrup, maple syrup, honey, fruit sauce or chocolate sauce.
