Rhubarb Pancakes

Ingredients

  • 2 cups favorite pancake batter
  • 3/4 cups finely diced rhubarb
  • 1/2 cup applesauce
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

Instructions

  1. Add the rhubarb, applesauce, cinnamon and ground ginger to the pancake batter.
  2. Cook on a hot skillet.
  3. Serve with syrup, fruit jam or jelly.
