Whipped Fruit Filling

Ingredients

• 1 1/2 cups pared, grated apple, peach or mashed berries
• 1 1/2 cups granulated sugar
• 2 egg whites*
• Zest of 1 lemon

Instructions

1. Mix all together. Beat until very stiff.
2. Use between layers.
3. Can also be used on top of cake.

Notes

* As always, use caution when using raw egg whites. Use organic when possible.
