Amish Graham Streusel Cake

Ingredients

  • 1 (18.25 ounce) box cake mix (any kind)*
  • 1 package Graham crackers
  • 3/4 cup brown sugar
  • 1/2 cup (1 stick) butter, melted
  • 2 teaspoons cinnamon
  • 1 cup confectioners' sugar
  • Water

Instructions

  1. Mix cake by following instructions on box.
  2. Crush Graham crackers. Add brown sugar, butter and cinnamon.
  3. Pour half of cake batter into pan, then half of the Graham cracker crumbs.
  4. Pour remaining batter in, then follow with remaining crumbs.
  5. Bake at 375 degrees F until done.
  6. Mix confectioners' sugar and water and drizzle over top of cake when done baking.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
