Chewy Lemon Bars

Ingredients

  • 1 (18.25 ounce) box lemon cake mix*
  • 1 egg
  • 1/2 cup butter, melted
  • 3 3/4 cups confectioners' sugar
  • 2 eggs, beaten
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F.
  2. Mix together cake mix, egg and butter. Spread into a 9 x 13 inch pan.
  3. In a separate bowl, mix together confectioners' sugar, beaten eggs, softened cream cheese and vanilla extract. Mix until smooth. Spread mixture over the bottom layer.
  4. Bake for 30 to 40 minutes or until top layer turns golden brown.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
