Death by Oreo Cupcakes

Ingredients

• 1 package regular size Oreo Cookies
• 1 package mini Oreo Cookies, for decoration
• 1 (18.25 ounce) box chocolate cake mix*
• 8 ounces cream cheese (room temperature)
• 8 tablespoons butter (room temperature)
• 3 3/4 cups confectioners' sugar
• 1 teaspoon vanilla extract

Instructions

1. Heat oven to 350 degrees F.
2. Mix cake mix according to directions, but do not bake.
3. Line cupcake tins with liners.
4. Place a regular size Oreo Cookie in the bottom of each one.
5. Chop coarsely 1/2 of remaining cookies and add to cake mix batter.
6. Fill the cupcake tins.
7. Bake for 15 minutes (or according to box directions).
8. While cupcakes are baking, make the frosting.
9. Cream together butter and cream cheese.
10. Add vanilla extract, then add confectioners' sugar slowly until blended well.
11. Chop remaining regular-size Oreos very fine. Add to frosting.
12. After cupcakes are cool, frost and decorate with a few mini Oreos on top.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
