Surprise Cupcakes

Ingredients

• 8 ounces cream cheese, softened
• 1/3 cup granulated sugar
• 1 egg
• 1 (16 ounce) package semisweet chocolate chips
• 1 (18.25 ounce) box chocolate cake mix*

Instructions

1. Cream sugar and cream cheese together.
2. Beat in egg.
3. Stir in chocolate chips; set aside.
4. Prepare cake mix according to directions on box.
5. Place paper baking cups into a muffin tin.
6. Fill paper bake cups 2/3 full. Drop one rounded teaspoon of cheese mixture into each cup.
7. Bake according to directions on cake mix box.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
