Butterscotch Sweet Potato Casserole
Ingredients
- 3 sweet potatoes
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1/2 stick (1/4 cup) butter
- 1/2 cup milk
- 1 (3 ounce) box instant butterscotch pudding
Instructions
- Boil, drain and mash sweet potatoes.
- In a large bowl, mix all ingredients well. Place in buttered casserole dish.
- Bake at 325 degrees F until nearly firm in center.
Notes
You can also bake this in an unbaked 9 inch pie shell.
